On 26 to 28 January 2019 our team was present in SIRHA in Lyon as every 2 years. This event is an opportunity for us to meet potential new producers and suppliers to impregnate about new features like the crockery or accessories to enhance the culinary creations.
On Saturday, we were able to assist in the International Catering Cup. The opportunity for us to support the new winners: France Team. Congratulations!
On Sunday, Entre Amis Catering Team was invited by our partner Enodis for a lunch in the “Village des Chefs”. The meal was realized by starred chefs who have favors of Michelin Guide.
For the starter, black truffle soup VGE. This soup is a culinary speciality created in 1975 by Paul Bocuse dedicated to President of the French Republic, Valéry Giscard d’Estaing.
For the main dish, we ate a bass fish with carrot slightly crunchy with a carrot ginger cream with curry.
For the dessert, a papaya pavlova with banana cream and apricot coulis by Patrick Roger.
Served by the pupils of the Paul Bocuse Institute.
This lunch was a moment of pure pleasure!
On Monday, Julien Pilati and his team were present for a demonstration on Enodis stand to make a signature dish: Niçoise salad, Mediterranean red tuna ventresca. The occasion for us to try their new equipment and to share our expertise.
